A KITCHEN REVOLUTION AT HANOI’S T.U.N.G DINING
WHERE CULINARY ART MEETS PRECISION AND TECHNOLOGY


 HANOI – 15th May 2020 – Head Chef Hoang Tung of Hanoi’s famed T.U.N.G dining introduces the highly anticipated 3D Food Printing in his latest tasting menu for Spring. In a collaboration that is a first in Asia with the Dutch-based byFlow, T.U.N.G dining aims to elevate its “avant garde” fine dining experience to the next level.
 
Marking the new season with refreshing changes of flavors and ingredients, T.U.N.G dining launched its Spring menu in March 2020, featuring Head Chef Hoang Tung’s new creations that takes inspiration from all corners of the world, across all four parts of his famous 18-course tasting menu. Bespoke diners can expect to be taken out of their comfort zone with curious flavor combinations such as Hamachi and Seaweed, King Prawn and Pomelo, or Black Chicken and Shiitake Mushrooms. Locally sourced ingredients of the season are also featured as in Chef Tung’s homage to the culinary arts of his home country.
 
What makes T.U.N.G dining’s menu even more special and the first of its kind in Asia, is the introduction of 3D Food Printing into the preparation and presentation of several highlight dishes. 3D Printing is an innovative technology to structure an object, using computer designs and robot arms to create geometric configurations, and layer by layer with food ingredients. The 3D shapes are made in order to complete precision, and to feature any design that enhance the taste and style of its creator.

“I am excited to work with byFlow from the Netherlands, one of the globally leading companies in the growing market of 3D Food Printing, to introduce this technology to the culinary world for the first time, not only in Vietnam but also in Asia”, elaborated Hoang Tung. “It is in the DNA of T.U.N.G dining to be “Twisted” and “Unique”; however further than being experimental and adventurous, we want to amaze customers beyond our loyal patronage, leave lots to imagination, and further enhance our footprint in the culinary map in Vietnam and the region.”

 
The 3D printing element is most visible in the presentation of one of T.U.N.G dining’s most popular dishes – its tender-crisp pan-seared scallops, with a texture that cuts through like butter. Coated in a deliciously silky sauce, the golden-brown scallop sits on top of a 3D-printed crown, made of pea puree. The scallop itself is a luxury of flavors; but the unique presentation is what truly takes the dish to the next level of finesse and complexity.

Leading to the main courses, is T.U.N.G dining's quintessential bread course, featuring its signature sourdough bread accompanied by home-made butter from parsley-bacon and beetroot-miso paste. The butters, previously coming in dollops, now are presented using 3D Food Printing, in a variety of geometric shapes in vibrant green and pink, which match the essence of the season. “And that’s the beauty of this technology”, said Hoang Tung. “I let my team be creative and come up with the different shapes and feels each day, so that we always have a little surprise factor in our menu, not only to the guests, but even among ourselves.”


Another menu item elevated by 3D Printing - A refreshment to the palette, and also one of the most aesthetically pleasing dishes.
“Beside experiments with our new menus in the future, 3D Food Printing also allows us to stay up-to-date with the latest food trends in the world, and cater to the specific needs for customization from many of our corporate clients”, Hoang Tung further explained his plan with the new application. “More than a dining establishment, we are also a company with ambition to operate more sustainably. This green technology really allows us to reduce food waste with such precision in printing and the exact materials it needs; not to mention the much improved efficiency for our culinary team.”
